Ingredients:
- 1 (8-ounce) package cheese , softened
- 1 (3.4 ounce) package instant cheesecake pudding, unprepared
- 1-1/4 cups Simply Pure Vanilla Coffee Creamer
- 2 pounds strawberries, hulled and sliced
- 3 medium bananas, dig coins
- 2 tablespoons fresh juice
Instructions:
- In a medium tall bowl, using an electrical mixer, whip cheese until it becomes smooth. it's going to bind up within the beaters, but continue as is and it'll relax . Add dry pudding mix. Beat until well combined.
- With mixer running slowly add creamer to the cheese mix. Add it a few tablespoon at a time then mix until it becomes a smooth mixture and every one of the creamer has combined into the cheese . Continue until all of the creamer has been added to the cheese . Whip until smooth.
- In a large bowl, combine sliced strawberries, banana coins and juice . Stir until all the fruit is coated with juice . Add cheesecake mixture to fruit. Gently fold cheesecake mixture into fruit.
- Chill until able to serve or serve immediately.
DONNA'S NOTES:
- Do not pour all of the creamer into the cheese directly . it'll get clumpy and regardless of how long you beat it, it'll stay that way. Trust me on this one.
- If you've got to substitute for the creamer, use 1 cup cream , 1/4 cup granulated sugar and a couple of teaspoons vanilla .
- To make this ahead: prepare the cheesecake mixture and refrigerate during a bowl. Mix all of the fruit during a large bowl and refrigerate. Before serving, drain any excess liquid from the fruit then fold the cheesecake filling into the fruit. Serve and enjoy!
